Roasted Chicken Tagine

I adore this easy, savory recipe that is perfect comfort food as the New England winter approaches.  I made it for Mitch and our dear friend Rich and I must say they loved it!  Olives, dates, sweet potato, carrots, chicken thighs and a ton of spices will tantalize your taste buds and satisfy your tummy.  Pair it with a lovely salad and baguette and you’re done.  The bonus is that it all cooks in one pan á la “Dinner in One” by Melissa Clark - my go-to cookbook.
