Chocolate Truffles

I didn’t think I had the kitchen skills, but it turns out making homemade truffles is really, really easy!  I wanted to treat my Valentine to something special and chocolatey, and Cupid’s arrow hit the bullseye with this simple NYT Cooking recipe.  I didn’t have quite enough bittersweet chocolate so mixed in a few ounces of semi-sweet morsels which were perfect. I rolled mine in cocoa powder (and confectioner’s sugar, but I don’t recommend that as the coating was absorbed by the truffle).  If you have the time, crushed nuts, sprinkles and chocolate ganache would all be outstanding toppings.
