Corn Salad with Halloumi & Mango
Thank you, Jill, for being the supreme chef that you are! Sourcing her ingredients from the best farm stands in Martha’s Vineyard is rule #1 for Jill, and rule #2 is finding excellent recipes. The care Jill took to husk the corn, cook the corn, sauté the halloumi cheese and so on was a joy to witness, but eating the finished product was even better. It is a hearty salad that would make a great lunch entree or you can pair it with halibut as Jill did for a lovely mediterranean dinner.
