Spicy, Crispy Lamb
This Indian inspired dish has incredible flavor and texture - the avocado slices add a nice creamy contrast to the aromatic garam masala spice and ground lamb. There is a bit of chopping and slicing involved but if you do all that ahead of time and reserve it, the cooking part is easy and fast. Adding a bunch of spinach (or whatever greens you choose) provides your veggie and protein in one delicious dish. As noted above, this recipe is from Melissa Clarks’s new cookbook “Dinner in One'' so I only used one large pan to cook everything. Add brown rice (I use the kind you can microwave - no pot needed) to soak up the flavorful sauce.
