Miso Glazed Scallops
Thanks to this pandemic, I have been using ingredients like miso and mirin for the first time and now I love finding dishes that use them! Enter this winner of a recipe that is so simple, a child could make it. While it says to grill the scallops, I just sauteed them in a pan with olive oil and butter. For two of us, I made ¾ lb of scallops and followed the recipe as stated. I used every bit of the miso-mirin mixture to slather on the scallops, and it made everything it touched (the salad, the vegetable, etc.) taste even better.
