Farro with Salmon

All I can say is that my daughter who doesn’t love salmon loved this dish! It stars farro, salmon, cucumbers, dill and red cabbage (which I subbed for radicchio as I find that too bitter). I never steam salmon but it cooked in just 7 minutes sitting atop the farro as it finished absorbing the water. And the lemony, crunchy “salad” made it the perfect compliment to the protein/grain. A beautifully sophisticated “bowl” of mediterranean goodness. You can only access this recipe on the NYT Cooking App, but it’s worth the $40.00/year fee. I am adding more diversity to my menus and have really loved everything I’ve made from this site.
