Roasted Salmon with Grapefruit

This dish is SO refreshing and made me realize how badly I crave Vitamin C! While it took a bit of work to deal with the grapefruits (one you peel and slice and the other you squeeze for the juice), the labor is well worth the results. It is a unique preparation and taste combination especially now as we’ve been eating heavier during the winter months. I love the marriage of citrus, honey and cayenne pepper in this recipe -- shout-out to Margaret for recommending it to me!
