Sheet Pan Harissa Salmon
The orange, ginger and harissa that coat the salmon make your tastebuds go “wow”! And that is especially nice as we start to anticipate spring weather and lighter foods. I love this one sheet pan dish as everything finishes together - baby red potatoes and red onions go in the oven 20 minutes earlier than the salmon - and you can literally serve it from the pan. I splurged and got King Salmon (from the Pacific Ocean) as it’s a bit richer than Atlantic Salmon. Serve with a green veggie and/or salad, and your meal will be a feast for the eyes and stomach.
