White Bean Soup with Turkey and Kale
Shout out to my daughter and excellent cook, Sabrina, for recommending this recipe. The hearty soup is perfect for cold, winter nights and a nice alternative to chili. It has all the basics of a great soup - carrots, onion, chicken stock - but adds bright notes with ginger, lemon and fresh herbs and earthiness with cumin and red pepper flakes. I kept the white beans whole for the most part but the more you smash them up, the thicker your soup will get - chef's choice. A simple salad pairs nicely along with a nice challah or roll (something to “clean” your bowl with).
