Avo Shrimp Quinoa Bowls

I’ve really gotten into “make your own bowl” night for dinner where I line up a buffet of ingredients from which to choose. But I like this recipe because it “forced” me to spice things up with a yummy cilantro vinaigrette to mix in with the quinoa and a home-made pico de gallo which was fresh and delish. TBH, I bought pre-cooked shrimp (shrimp cocktail) and included my standard pulled roasted chicken and roasted brussels/ broccoli to the buffet line-up. Everyone designs their bowl, so everyone is happy. Another dinner in the books.
