Chicken with Plums and Onions
I love an entree I can prepare ahead of time and then stick in the oven and forget about (until the timer goes off) , especially when I have guests over. This holiday-worthy dish marries roasted chicken with roasted plums and is both delicious and pretty. Pair it with a grain to soak up the juices, add a salad and/or veggie and you’re good to go. (FYI my cooking time was longer than suggested - you want to be sure your chicken is cooked through).
