Roasted Chicken Shawarma
This recipe is a really great way to give your chicken some oomph! We used it as the centerpiece of our Mediterrean Bowls (along with quinoa, roasted veggies, etc.), but it stands on its own very well. The red onions give it color and are delicious when soft and roasted. Though I was never a fan of chicken thighs, I find them so flavorful and tender (and inexpensive I dare add) in a roasted dish like this that now I am a proponent.
