Green Beans with Crisp Shallots

NYT Cooking, what would I do without you? You make me look like a master chef who spends hours in the kitchen when that couldn’t be further from the truth. But I will say, I’m good at picking out excellent recipes and this one is fantastic! My motto is “if you can read, you can cook”. And the fewer words in the recipe, the better. Aside from the pancetta, you will likely have most of the ingredients on hand. Substitute chicken breasts for thighs if you like as both will be delicious. Be sure to regularly temp chicken about 20 minutes in as it cooked faster than the recipe called for.
