Halibut with Citrus and Olives

While live animals are super neat, we must also appreciate the nutrition and sustenance that dead animals provide us (apologies to all the vegetarians and vegans out there).  This recipe stars halibut fish and I love it because it is brightened both in flavor and in presentation by zesty orange and lime slices, charred olives and feisty additions like red pepper flakes, cumin and mint.  While the ingredient list looks lengthy, it’s really easy to prepare and has the “wow” factor when plated.
