Ina Garten Perfect Roast Chicken

After reading Ina Garten’s memoir (see below), I felt compelled to try one or two of her recipes.  I must confess that I find a lot of her recipes a bit heavy for my taste, but her “perfect” roast chicken was just that.  The ingredient list is simple, the preparation is simple, and you get to stick it in the oven and pretty much forget about it.  When I pulled the bird out after 1.25 hours, I was amazed by the beauty of the golden chicken, bright veggies, as well as by the unbelievable moistness and flavor of the meat.  It’s helpful to watch Ina in the video embedded in the link below.  I also made Ina’s Meat Loaf which was terrific!
