One-Pan Coconut Curry with Chicken

I love Indian cooking but I never made it at home until now.  I don’t mind a little prep work when I know that everything cooks in just one pan at the end.  Talk about easy clean-up!  The beauty of this dish is that it is really filling even if you sub light coconut milk (which I did) for full-fat and reduce the amount of rice (just adjust the boiling water a bit as well) to make it less caloric.  I used plain, not crunchy peanut butter ‘cuz that’s what’s in my cupboard.  It was the one night my boys were satiated and we actually had leftovers.
