Skillet Chicken with Orzo

“This is delicious! It’s really good” said my dinner companions several times.  Mitch and his mom just loved this Mediterranean style dish and so did I! I think the freshness of the cucumber topping along with the feta cheese adds a nice dimension that seems to evolve as it mixes into the warm chicken and orzo. It’s rare for me to make a pasta dish, but the orzo is light and serves as the perfect starch.  I made 8 chicken thighs (just over 2 pounds) and had a lot of orzo leftover so you could probably use 1.5 cups instead of the 2 cups called for.  Serve with a salad and/or veggie and voilá, you’re a star!
