Chicken Tortilla Soup

Admittedly this is the second Chicken Tortilla Soup recipe I have put in Bookmark This (see Volume 34 for the first one), but I was specifically looking for a slow cooker version that feeds many mouths.  In the past few months, I’ve put my crock pot to work several times because it allows me to prepare dinner for many guests way ahead of time. This recipe has a nice spice level (I probably used 3-4 chipotle peppers but you can use fewer) and it is super hardy with black beans and chicken (you could add corn niblets too).  Plus the toppings make it fun - avocado, sour cream, tortilla chips and cilantro. I definitely got 8 - 10 servings out of it and my hungry sons were pretty satisfied, though we all had enough tummy real estate left for sundaes from JP Licks!
