Arctic Char with Peppers

You could use any fish, but I’m really loving Arctic Char lately for its color, flavor and the fact that it’s not salmon...again.  I love the olives as a delicious accent, and the sherry vinaigrette with fresh parsley to finish it off.  These details add a finesse that I would never think to do in a million years and yet are so simple to incorporate.
