Roasted Chicken with Mint Sauce

Hooray for Bobby Flay!  I had an abundance of fresh mint leaves (which you may have in your summer garden) and found this yummy recipe full of flavor.  Hopefully you like the color green especially if your green vegetables and/or salad are plated with it, so good to keep in mind when picking your sides.  The recipe has a bit of everything - interesting spices, sweet honey and fresh mint. My only caution is don’t overcook the chicken - I like to use a meat thermometer and set my timer for less time than the recipe suggests.
