Chicken Pot Pie
I’m going real basic on you with this recipe (feels like a throwback to a 60’s concoction my mom would have made), but it just works. I’ve tried a few chicken pot pie recipes over the years, and I love this one as I just use a store-bought rotisserie chicken and shred it which makes it easy to throw together, and also allows the chicken to blend better with the other ingredients. Everyone in my house loves it, so if you have kids coming home from college, this is the perfect comfort food that won’t take you all day to make.
