Coconut-Miso Salmon Curry

Mitch is thrilled to be the beneficiary of my desire to try out new recipes -- he is the Jeffrey to my Ina if you get that Ina Garten cooking show reference. And he really LOVED this one. A curry, I learned, doesn’t have to have curry in it (though I did sprinkle some in for fun) - it’s just a melding of different flavors (garlic, miso, basil and ginger in this instance). I recommend using a total of 3 cups of liquid (1 c. coconut milk, 2 c. water) and reading the user comments if you have the NYTCooking App as I find them very helpful. The flavor profile was so good that we had to sop up every last bit of the sauce with rice or bread, and it was easy to cook once a little prep work was done. A BMT must-try!
