Mexican Street Corn Salad

I love this easy recipe because it’s a great summer side dish and you don’t need to floss after eating it because it’s OFF the cob. It’s got some heat from the jalapeno pepper and chili powder (or red pepper flakes), but that’s balanced by the other ingredients including lime juice and cotija cheese. It’s a starch, it’s colorful and it’s different, so get shucking.
